Not all matcha is the same powder. Here's what each one tastes like and what we use it for.
First harvest · shade-grown
Best for: a bowl on its own. Sweet, creamy, and bright green.
First/second harvest blend
Best for: lattes where you still want to taste the tea.
Later harvest · bolder
Best for: iced drinks and anything with lots of milk.
Every bowl takes about a minute, and you can watch every step.
2 grams of matcha pushed through a fine sieve, so there are no clumps.
70 ml of water at 80°C. Hotter than that scorches the leaf and turns it bitter.
A bamboo chasen, moved fast in a "W" shape until a fine foam covers the top.
Straight to you, while the foam is still there, in a bowl or over milk.
